      <title>Sausage Tray Bake</title>

&lt;ul&gt;
&lt;li&gt;6 vegan sausages&lt;/li&gt;
&lt;li&gt;Red pepper&lt;/li&gt;
&lt;li&gt;Yellow pepper&lt;/li&gt;
&lt;li&gt;2 small courgettes, chopped into bite sized pieces&lt;/li&gt;
&lt;li&gt;Red onion&lt;/li&gt;
&lt;li&gt;200g tenderstem broccoli&lt;/li&gt;
&lt;li&gt;200 cherry tomatoes&lt;/li&gt;
&lt;li&gt;4 tbsp olive oil&lt;/li&gt;
&lt;li&gt;2 tsp salt&lt;/li&gt;
&lt;li&gt;1 tsp smoked paprika&lt;/li&gt;
&lt;li&gt;5 fresh sage leaves, chopped&lt;/li&gt;
&lt;li&gt;2 rosemary sprigs&lt;/li&gt;
&lt;li&gt;4 garlic cloves, minced
 &lt;/li&gt;
&lt;/ul&gt;
&lt;p&gt; &lt;/p&gt;
&lt;h3 id=&#34;method&#34;&gt;Method&lt;/h3&gt;
&lt;ol&gt;
&lt;li&gt;Preheat over to 180 degrees c, fan.&lt;/li&gt;
&lt;li&gt;Mix everything well in a large baking tray.&lt;/li&gt;
&lt;li&gt;Roast approx. 40 mins. Season to taste.

      <description>&lt;p&gt;As someone who doesn&amp;rsquo;t love vodka, I was surprised I loved this recipe!
 &lt;/p&gt;
&lt;p&gt; &lt;/p&gt;
&lt;h3 id=&#34;ingredients&#34;&gt;Ingredients&lt;/h3&gt;
&lt;ul&gt;
&lt;li&gt;1/2 cup cashews&lt;/li&gt;
&lt;li&gt;120ml water&lt;/li&gt;
&lt;li&gt;3 tbsp oil&lt;/li&gt;
&lt;li&gt;1 tsp red pepper flakes (see notes)&lt;/li&gt;
&lt;li&gt;3 garlic cloves&lt;/li&gt;
&lt;li&gt;Can of chopped tomatoes 400g&lt;/li&gt;
&lt;li&gt;2 tbsp vodka&lt;/li&gt;
&lt;li&gt;1 oxo stock cube&lt;/li&gt;
&lt;li&gt;1/2-1 tbsp brown sugar&lt;/li&gt;
&lt;li&gt;1/4 tsp salt&lt;/li&gt;
&lt;li&gt;1.5 tbsp tomato puree&lt;/li&gt;
&lt;li&gt;Rigatoni pasta&lt;/li&gt;
&lt;li&gt;Fresh basil&lt;/li&gt;
&lt;li&gt;Cheese (optional)
 &lt;/li&gt;
&lt;/ul&gt;
&lt;p&gt; &lt;/p&gt;
&lt;h3 id=&#34;method&#34;&gt;Method&lt;/h3&gt;
&lt;ol&gt;
&lt;li&gt;Soak your cashews for 2+ hours.&lt;/li&gt;
&lt;li&gt;Blend cashews with water.&lt;/li&gt;
&lt;li&gt;Put on your pasta. Fry red pepper flakes and crushed garlic.&lt;/li&gt;
&lt;li&gt;Add in your vodka, sugar, tomatoes, salt and puree. Simmer for 5 minutes.&lt;/li&gt;
&lt;li&gt;Add in your cashew cream and allow to thicken a bit. Season to taste.&lt;/li&gt;
&lt;li&gt;Serve with basil and cheese.&lt;/li&gt;

      <description>&lt;p&gt;The Amok is a Cambodian curry, which is steamed with fish and served in banana leaves on special occasions. Since this version is not steamed, I&amp;rsquo;ve stuck with calling it &amp;lsquo;Amok style&amp;rsquo;, since it isn&amp;rsquo;t true Amok this way; still super tasty though!

&lt;li&gt;30g ginger&lt;/li&gt;
&lt;li&gt;2 tsp turmeric&lt;/li&gt;
&lt;li&gt;4 makrut lime leaves&lt;/li&gt;
&lt;li&gt;1.5 tsp sugar&lt;/li&gt;
&lt;li&gt;2 tsp salt&lt;/li&gt;
&lt;li&gt;1 large chilli&lt;/li&gt;
&lt;li&gt;3 - 4 tbsp lime juice (or 2 limes)&lt;/li&gt;
&lt;/ul&gt;
&lt;h4 id=&#34;curry&#34;&gt;Curry&lt;/h4&gt;

&lt;li&gt;1 onion&lt;/li&gt;
&lt;li&gt;1 aubergine&lt;/li&gt;
&lt;li&gt;200g oyster mushrooms, torn&lt;/li&gt;
&lt;li&gt;400g coconut milk&lt;/li&gt;
&lt;li&gt;Salt to taste&lt;/li&gt;
&lt;li&gt;Pepper to taste (Kampot if you have any!)
