wagamama Kare Burosu Ramen

This is inspired by a wagamama dish, from their restaurants & recipe book. It’s a long standing favourite. Recently I went back to wagamama for the first time in years, and I’m pretty sure our rendition is better!

Ingredients

2 servings of precooked Udon noodles, we use Tesco own brand

1 pack of extra firm tofu (200g), cut into 0.5cm slices

5 tbsp cornflour

0.25 tsp smoked paprika, just for color

1 tsp beef flavour stock powder

veg oil

200g or so mushrooms, sliced, we use oyster

for the sauce:

0.5 tsp garlic powder

2 tbsp soy sauce

1 tbsp vinegar, we use rice vinegar

0.5 tsp sugar

dash sesame oil

3 tbsp curry paste, we use Jamie Oliver’s madras curry paste

500ml veg stock

100g pack spring onions

some extra veg, pick from:

1 carrot peeled

or 2 pak choi, sliced

or the greens from a cauliflower, sliced

Method

Slice the tofu, rougly 0.5cm thick slices.
Put the 5 tbsp cornflour in a takeaway tub with a lid, add the 0.25 tsp smoked paprika, a couple of grinds black pepper, and 1 tsp beef stock powder.
Add the sliced tofu and shake until well coated.
Heat a non-stick frying pan with a generous layer of veg oil. Fry tofu on high heat until crispy and golden on both sides, then set aside.

Ingredients

5 tbsp extra-virgin olive oil, plus extra for the toast

2 red onions, peeled and finely diced

1¼ tsp fine sea salt

4 garlic cloves, peeled and crushed

2 leeks (200g), whites and greens thinly sliced and rinsed

160g drained jarred artichokes in oil (ie, from a 285g jar)

400g tin butter beans in water, drained

200g frozen petits pois

1 vegetable stock cube, dissolved in 250ml boiling water

1 tbsp lemon juice

10g fresh mint, leaves picked

10g fresh flat-leaf parsley

¼ tsp coarsely ground black pepper

Sourdough, to serve

Method

Put the oil in a wide, deep frying or saute pan for which you have a lid, and set it on a medium heat. When hot, add the onion and salt, and cook, stirring often, for 10 minutes, until soft and sweet. Stir in the garlic and leeks, cover the pan and leave to cook for eight minutes, until the leeks are soft.

I had never cooked with tamarind paste before this recipe but wish I did!

Ingredients

200g rice noodles

200g firm tofu (torn into chunks)

Cornflour

Onion

4 cloves garlic

1 red pepper

Handful of bean sprouts

3 spring onions

3 tbsp soy sauce

3 tbsp sugar

3 tbsp tamarind paste

Method

Coat tofu in cornflour and fry until crispy.

Meanwhile fry onion until soft.

Add in garlic and red pepper for 5 mins until soft.

Meanwhile, boil your noodles accordingly until slightly underdone.

Add in bean sprouts and spring onion.

Add in last three ingredients and noodles for 2-4 mins.

2 tbsp oil/margarine (flavourless)

2.5 cups bread flour

1/4 cup white sugar

1 tsp yeast*

1 tsp salt

1/3 cup brown sugar

2 tsp ground cinnamon

2 tbsp margarine

1 cup icing sugar

1-2 tbsp plant milk

1/2 tsp vanilla extract (optional)

Method

Put the first 6 ingredients (up to and including the salt) in your bread maker (in that order) on the dough setting.

Mix together your brown sugar and cinnamon and melt your margarine.

Roll your dough into a rectangle (9x11 inches) on a lightly floured surface.

Spread the margarine and sprinkle your cinnamon sugar all over.

From one of the short sides, roll your dough.

Cut into roughly 9 pieces.

Place into a greased baking dish/tray. Leave in a warm place for an hour, or the fridge overnight.

Bake for 20 mins at 190 degrees.

Meanwhile, mix your icing sugar, milk, and vanilla in a bowl. When everything’s done, pour it evenly on the top!

A classic. No need to buy bread ever again (unless it’s a different kind).

Ingredients

300ml warm water

1 tsp sugar

2 tsp salt

500g bread flour

2 tsp yeast

Oil

Method

Put everything in the bread machine in that order. Mix the salt and the sugar in the water before adding in the flour.

This is roughly a 2lb loaf on my machine. Customise your crust settings and whatnot!

Caramelised Aubergines

Whilst in Vietnam we ate a lot of clay pot aubergines, and this recipe is a good recreation. For bonus points it is also nice and simple. Credits to golden tiffin for the original recipe.

Ingredients

2 big or 3 smaller aubergines

Oil for frying

4 tbsp soy sauce

4 tsp sugar

2 tsp paprika (preferably smoked)

1 tbsp sriracha

1 tsp pepper

8 spring onions

Rice to serve

Method

Slice the aubergines into 2 cm thick slices, then fry/grill/bake until very soft and well browned. This will take quite a long time – 20 minutes or so. If frying, put a good layer of oil in the pan, or if grilling/baking, brush the oil on to both sides.

Once the aubergines are soft, cut them up into bite-sized pieces, and return them to the pan.

Add the soy sauce, sugar, paprika, sriracha, pepper and spring onions, and stir continuously until the mixture takes on a gooey consistency.

Serve with rice.

Our questionably French Onion soup recipe, inspired by BBC Good Food. We usually have it with some sort of bread or croutons, but some nice vegan cheese would work well too.

Ingredients

1 kg brown onions

3 tbsp oil

1 tsp sugar

5 cloves of garlic

2 tbsp flour

300 ml wine, or wine stock pot

1.2 l of beef stock (we use 3 OXO Vegan Beef cubes)

1.5 tbsp yeast extract (e.g. Marmite)

4 tbsp beef-flavour gravy granules

Can’t go wrong with soy sauce and oil!

1 bunch of spring onions (4-7 large)

2 tbsp oil

2-3 tbsp soy sauce

2 servings of stir fry noodles

Method

Heat oil. Fry your spring onions until they begin to brown.

Add in noodles and soy sauce. Heat until noodles are done.

Additional notes

This is a very malleable recipe; alter the oil and soy to your liking! Add more if using light soy sauce.

One of my favourite, simplest ways of serving pasta.

Ingredients

I know, sounds a bit cursed right? Hold off your judgement until you’ve tried it! From BOSH.

Ingredients

800g jackgruit in water (2 cans)

3 tbsp oil

1 tsp salt

1/2 tsp pepper

1/2 tsp sugar

2 tsp oregano

2 tsp sage

2 tsp onion powder

1 tsp garlic powder

1/2 tsp thyme

Gravy granules

2 servings of oven chips

Method

Toss jackfruit onto a baking tray and coat in seasonings and oil. Use your hands to ensure it’s well covered.

Bake for 20 minutes at 200 degrees celsius.

Take out of oven and stir. Put back in for another 20 minutes (check you chips, you can add them in now too).

Make your gravy. For more flavour, I add onion and garlic granules to mine!

Remove from oven. Tear jackfruit with a fork.

Serve chips. Load on jackfruit and gravy!

The Amok is a Cambodian curry, which is steamed with fish and served in banana leaves on special occasions. Since this version is not steamed, I’ve stuck with calling it ‘Amok style’, since it isn’t true Amok this way; still super tasty though!

Add asparagus towards the end.

Top with ‘parmesan’, butter, and lemon juice.

Ingredients

4 cups bread flour

7g packet of instant yeast

2 tsp salt

2 cups (470ml) lukewarm water

4+ tbsp olive oil

Flaky sea salt (optional)

Fresh rosemary (optional)

Olives (optional)

Sun dried tomatoes (optional)

Method

Mix flour, yeast, salt, tomatoes and olives (chop your tomatoes and olives as you wish).

Add in the water and mix with a spoon (it will be very wet).

Rub the surface well with olive oil.

Cover and place in the fridge for at least 12 hours.

Make sure you’ve coated it in enough oil so it doesn’t dry out, especially if you’re just using a tea towel.

Grease two tins (I use cake tins).

Deflate your dough and carefully remove it from the bowl.

Split the dough into two, coat with a tbsp of oil each and rest for 3-4 hours.

Sprinkle sea salt, rosemary, olives and other additional toppings.

Coat with more oil and then use your fingers to dimple the dough (use them all at once and press down).

Bake for 25-30 minutes at 200 degrees (fan).

Remove from the tins and let cool for 10 minutes.

After a trip to South Africa to see family, I came back with a desire to find the recipe for some of the best beans I have ever eaten; sadly, I didn’t find it, but I did find these, which are a close second.

While I’m not going to sit here and tell you that this tastes like mac and cheese, I will tell you that you’ll love this recipe in its own way! The recipe comes from Madeleine Olivia, a fellow Cornish vegan, and is one of the few recipes where I’ve barely altered it :)

Ingredients

1 cup plant milk

1 cup water

I have tried and tested many a vegan chilli, and this has always remained the best. A great recipe for meat eaters who say they hate tofu ;)

This is, by far, my most asked for recipe! Quick, easy to make, hella tasty; what more do you want?

Definitely Not Goat Curry

Why the title, you ask? Other than the fact it does not contain any goat, the recipe was taken from good-old-trusty BBC Good Food, and there you will find many reviews saying “excellent recipe, but it isn’t goat curry!”. I don’t know what goat curry is, but this recipe is delicious nonetheless.

Ingredients

Onion

10 cloves of garlic

100g of ginger

50-100ml oil

2 chillies

Handful of curry leaves

3 thyme sprigs

4 tbsp curry powder

Can of chopped tomatoes

2 ‘beef’ stock cubes

After spending a long time looking for the perfect spag bol, I felt defeated. It was only after I had a roast dinner, I thought to myself “everything really is better roasted”. While roasted tomatoes are not a new concept with regards to spag bol, it was to me. So here it is, the first recipe I came up with entirely myself! Enjoy :)
